Dumplings of Ricotta, olives and 4 Luppoli Premium Lager

Recipe ingredients:

(for 4 people)

240 g of Roman Ricotta cheese d.o.p.
Salt to taste
Pepper to taste
30 g of wheat flour type 00
2 egg yolks
1 dl extra virgin olive oil
10 chopped stuffed green olives of Piceno d.o.p.
4 prawns of Sicily
50 g of 4 luppoli Premium Lager
30 g of butter
Marjoram to taste

Preparation:

Mix the Roman Ricotta cheese with salt, pepper, chopped stuffed green olives of Ascoli Piceno, flour and egg yolks, then let the mixture rest then make dumplings of about 5 cm long. After that cook them for a few minutes from boiling, drain and let cool. Sauté the shrimp in extra virgin olive evaporating with the 4 Luppoli Premium Lager. Whip a sauce with butter, marjoram and reduced cooking prawns sauce.

Presentation:

Alternate prawns and dumplings on the plate, decorating with whole stuffed olives of Ascoli Piceno, then place the sauce.
