Boil the chicory in salted water, cool and dress with a vinaigrette made of anchovies of Menaica.
Mix and blend the burrata cheese with anchovies, pouring of anchovies, salt, pepper and incorporate the previously whipped egg whites. Put the mixture into 4 glass jars, close and cook in the oven at 180 ° C for 6 minutes on water bath.
Marinate the anchovies of Menaica with the lemon juice. Dress the chicory with extra virgin olive oil and salt.
