Rice with cotechino Modena sausage and balsamic vinegar
5 Luppoli Bock Chiara.

320 g Carnaroli rice
1 dl of white wine
80 g of Parmesan cheese d.o.p.
120 g of butter
Salt to taste
120 g of boiled and crumbled Modena Cotechino i.g.p.
Traditional balsamic vinegar of Modena d.o.p. to taste
Melt the butter in a saucepan, add the chopped shallots and fry on low heat, then add the rice, toast, sprinkle with white wine, let it dry, sprinkle with water and cook, after that stir in butter and grated Parmesan cheese. Apart in a fry pan degrease Cotechino Modena sausage previously boiled and crumbled.
Spread the rice on a plate, sprinkle with crumbled Cotechino Modena and pour a few drops of Traditional Balsamic Vinegar of Modena.
