Snack of smoked trout of Rieti with 5 hops foam
5 Luppoli Bock Chiara.
(for 4 people)
200 g of smoked trout fillets of Rieti
1 l of Bock Chiara 5 luppoli
125 g of sugar
Cinnamon to taste
Grated zest of half a lemon
3 g of carrot sprouts and dill
4 slices of bread
Beat the eggs with Bock Chiara 5 luppoli into a saucepan and then add the sugar, cinnamon and grated lemon zest, then place the pan over the fire, continuing to beat with a whisk, heat first with high flame and then slower until well fitted, after that remove from the heat before boiling and continue beating for another 5 minutes untill resulting a foam.
Lay the trout on toast, complete with carrot sprouts and dill, then with small spheres of Bock Chiara 5 luppoli foam.
