4 slices of Bresaola (dried beef) of Valtellina i.g.p.
A stalk of broccoli
A stalk of celery
A pink grapefruit
Extra virgin olive oil to taste
Salt to taste
White pepper to taste
A leaf of celery
Wash carrot, broccoli stalk, celery root and celery, then peel them, cut into cubes of 0.5 cm per side, blanch them separately from each other, cool with ice water and then dry them. Peel the orange and pink grapefruit until the pulp, dice them. Place all vegetables in a bowl, add flavor with citrus and extra virgin olive oil, salt and pepper.
Place a small amount of salad of vegetables and citrus fruits in the center of a Bresaola of Valtellina slice, close to bundle and decorate with the leaves of celery.
