Smoked cod and spicy broccoli

Recipe ingredients:

(for 4 people)

600 g of desalted cod
2 broccoli
200 g of EVO oil
1 garlic clove
1 fresh spicy chilli
Salt to taste
Pepper to taste
Cork for smoking

Preparation:

Get 4 cod slices of 150 g each
Place them on a perforated plate with the skin facing upwards
Preheat the oven to 90 ° C
In a metal container burn cork, "smother" the fire with a cloth in order to obtain smoke
Immediately place the container in the oven and then the plate with the fish
Bake for 15 minutes
Turn off the oven and let the fish for 30 minutes
Clean the broccoli getting beautiful flowers to accompany the fish
Cook with a little oil and water the waste and cleaned stems
Blend and emulsify with olive oil and season to taste
Boil and cool flowers
In a frying pan, brown the garlic with the chopped chilli in a little oil
Place the flowers blanched and cook for a few minutes

Presentation:

Pour the cream into the dish bottom.
Arrange the cod and served with broccoli.
